ʻRiz fritʼ (stir-fried rice) is a Chinese-inspired dish introduced when immigrants came to work and settle in Mauritius, quickly establishing a Chinatown in the capital Port Louis. Most were traders and merchants and their cuisine became ingrained into Mauritian culture – we now have dishes like Sunny-side-up egg, chicken & pak choi rice bowl and fried noodles and dumplings, which can be found across the island.

This is the traditional combination of vegetables used in fried rice, but you can always add alternatives – fresh or frozen peas and sweetcorn work well. The fish sauce adds a depth of umami to the dish and those slices of omelette make it a hearty dinner. You can use leftover rice for this; just make sure it has been chilled after cooking. This works well as a main dish served with a Ripe tomato salad with chilli & lemon and some red chilli sauce, or it can also be eaten as a side.
